Yum! The perfect lunchbox addition or mid-morning snack that’s ready in less than 30 minutes.
I’m not sure about anyone else, but I’ve been filling lunchboxes with the same things for some time, so I’ve decided it’s time for a change. I reckon these pizza scrolls might spice things up a bit. After baking this batch, I realised I should have doubled the recipe, since they’re so tasty. I had intended to freeze these individually for school lunches, but they were gobbled up.
Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 24
Ingredients
⅓ cup tomato paste
1 tsp dried Italian herbs
2 frozen puff pastry sheets, thawed
6 slices salami, finely chopped
1 cup pizza cheese
Method
Preheat oven to 200°C/180°C fan-forced. Line two oven trays with baking paper.
Combine tomato paste and herbs in a bowl. Spoon over pastry. Sprinkle with salami and cheese. Roll pastry up tightly. Cut into 1.5cm pieces.
Place pieces close together, cut side up, on prepared trays. Bake for 10 to 15 minutes or until golden.
Transfer to a wire rack to cool. Serve. Store in an airtight container or freeze.
Tip: You can reheat frozen scrolls individually in the microwave on high for 10 seconds.
