22 Oct Recipe: Donna Hay’s Creamy, Dreamy Chocolate Tiramisu
Donna Hay’s chocolate and mascarpone dessert, is like the traditional chocolate Tiramisu, but without the coffee. This as a special-occasion family dessert as it’s quite rich and at around $4* per generous serving, it’s still an attractive homemade alternative to buying individual desserts. The cost of cream and mascarpone are the main expenses.
Ingredients
Chocolate Ganache
- 1 cup (250ml/8½ Fl oz) pure (whipping) cream
- 180g (6¼ oz) dark (70% cocoa) chocolate, finely chopped
Cream filling
- 3 cups (750ml/25 Fl oz) pure (whipping) cream, extra
- 1½ cups (375g/13½ oz) mascarpone
- 1½ tablespoons vanilla extract
- 30 small sponge finger (Savoiardi) biscuits
Chocolate dipping sauce
- 2 tablespoons cocoa powder
- 2 tablespoons pure maple syrup
- ⅔ cup (180ml/6 Fl oz) milk
Method
- To make the chocolate ganache, place the cream and chocolate in a small saucepan over low heat. Stir until smooth and combined. Set aside.
- To make the cream filling, place the extra cream, mascarpone and vanilla in a large bowl and whisk until soft peaks form. Set aside.
- To make the chocolate dipping sauce, place the cocoa powder and maple syrup in a bowl and mix to dissolve the cocoa powder. Pour in the milk and stir to combine. Set aside.
- To assemble, dip half the sponge finger biscuits into the chocolate dipping sauce for 3 seconds and place in the base of a large 2-litre-capacity (2-quart-capacity) serving dish or bowl.
- Top with half the cream filling and drizzle with ⅓ cup (80ml) of the chocolate ganache. Repeat the layers, ending with the chocolate ganache. Refrigerate for at least 2 hours before serving. Serves 6–8
Cook’s note
When dipping the biscuits, be a quick dipper!
