28 Jan Strawberry Lamingtons Recipe
Satisfy your sweet tooth with this berry tasty twist on the traditional Aussie lamington.
Feeling the post-Australia-Day-weekend blues? These pink delights are just the antidote. Dipping them in the strawberry icing and coating in coconut is a great task to get the kids involved with, but just be prepared for the mess that comes with it.

Ingredients
Lamingtons
9 eggs, separated
200g caster sugar
80g plain flour
40g cornflour
50g melted butter, cooled
2 tsp vanilla essence
Icing
30g unsalted butter
4 tbs strawberry jelly crystals
2 cups icing sugar, sifted
100g desiccated coconut
Method
Preheat oven to 180°C/160°C fan forced. Grease a 30cm x 18cm pan.
Beat egg yolks and 100g of the sugar until mixture turns pale. Fold in sifted flours, then butter.
Add remaining sugar and vanilla to eggwhites and beat until stiff. Fold half the eggwhites into yolk mixture. Fold in remaining eggwhites. Spread into pan and bake for 20 minutes. Remove from oven and cover with tea towel.
For the icing, place butter and jelly crystals in a bowl and pour in 250ml boiling water. Stir until butter is dissolved. Sift in icing sugar and whisk until smooth. Set aside to cool slightly. Cut sponge into rectangles, dip in icing, then roll in coconut.
